Chocolate truffle cake! I think it's time to bring back Chocolate day! After all, what's a week without at least a day of chocolate! Not much fun I have to think. And what better way to celebrate this great new revival than with a Chocolate truffle tart. Not only delicious but totally addicting! This is very nice! And the taste? Well, it was light, moist, chocolaty, sweet, rich (but surprisingly not as rich as I expected with all the chocolate in it) and just, very satisfying. Maybe because it's about 90% chocolate, 10% flour.

Chocolate truffle tart
Ingredients:
100 grams butter, a cup of caster sugar,
100 grams good quality dark chocolate,
3 eggs separated,
1 teaspoon vanilla extract,
20 grams flour,
40 grams hazelnuts.

Method of making chocolate truffle cake!
Steps 1.
Preheat oven to 180 degrees Celsius.
Steps 2.
Butter and flour spring form cake tin 20 cm.
Steps 3.
Melt the butter in a small saucepan over low heat.
Steps 4.
Add sugar and chocolate and stir until chocolate is melted and sugar is dissolved.
Steps 5.
Remove from heat and transfer to a mixing bowl to cool for about 30 minutes.
Steps 6.
Add egg yolks and vanilla and beat well to combine. Sift flour and mix well, then add hazelnuts.
Steps 7.
Beat the egg whites with an electric whisk until very fluffy, then fold them through the chocolate mixture spoonful at a time.
Steps 8.
Transfer the chocolate mixture to the prepared cake pan and bake for about 35 minutes or until a skewer inserted through the center comes out clean.
Steps 9.
Let cool for 15 minutes before removing from pan.
