Easter time! Time for religious thought and personal sacrifice or time for endless guilt-free chocolate and family feasts? No matter what your religious leanings are, chocolate is sure to be on the agenda at some point or another. And it probably doesn't help that they started selling Easter eggs as soon as the Christmas tree fell!

Now a devout chocolate lover and connoisseur. I definitely know the difference between rich, lush, sinful chocolate that melts in your mouth, versus chocolate that is too sweet, hard, and unsatisfying. And as chocoholics know, 'nothing beats quality!'

But while passing by my local health food store today (on my way to my daily chocolate shop), I saw the word 'Carob' plastered across the window as "Healthy Chocolate". Sure, I've known about this 'Carob' character all my life, but I can't remember the last time I tasted it. And 'healthy' too? Well if it's really delicious then why doesn't everyone eat it? I decided to investigate further.

Carob turns out, is the common name for a tree species called Ceratonia Siliqua and also goes by the common names "St John's Bread" and "Grasshopper". It is free from the addictive effects of caffeine and theobromine found in cocoa, and contains less fat and more natural sugar than cocoa. Carob is also higher in protein and contains some minerals that are hard to come by in our diets- Potassium, Magnesium, Barium, Copper and Nickel, as well as vitamin A, some B vitamins and Vitamin D. But the REAL question is, “Does it taste good?”

I started my Carob taste test with the exciting prospect of “Carob peppermint swirls”, and while it didn't melt in your mouth, it was absolutely delicious! On the other hand, 'soy carob shoots without added sugar', is really an 'acquired' taste. It doesn't melt and isn't sweet enough to give off a little chocolate flavor. Indeed, not much flavor at all!

And with that I say we're back to 'Chocolate chip cookies! Be a Rebel! And mix some Carob peppermint with your dark chocolate instead! Surprisingly your cake still tastes great and now you can even claim that it's Healthy too!

Chocolate chip cookie recipe
Ingredients:
125 grams chopped butter,
1 teaspoon vanilla essence,
1/3 cup (75 grams) strong packed brown sugar,
1/3 cup (75 grams ) caster sugar,
1 egg,
1 1/2 cups (185 grams) flour flour,
1/2 teaspoon bicarbonate of soda,
cup (30 grams) finely chopped roasted cashews, and 1 cup
(190 grams) chocolate chips/carob peppermint rounds

Steps and methods:
Steps 1.
Preheat oven to 180C. Beat butter, vanilla essence,
sugar and eggs in a small bowl with an electric mixer until smooth.
Steps 2.
Sift flour and bicarbonate of soda.
Steps
Then add walnuts and chocolate/carob.
Steps 3.
Place a tablespoon of dough about 5 cm apart on a greased baking sheet and press gently.
Steps 4.
Bake for 10 minutes or until lightly browned.
Steps 5.
Let stand for 2 minutes before removing from the tray. Make 20.
Steps 6.
It's delicious when it's freshly baked and goes well with a cup of tea!
