Material:
4 pounds russet potatoes (hulled, washed, and drained)
4 tablespoons unsalted butter
wheat flour
1 red onion (chopped)
1 clove garlic (chopped)
4 cups beef stock
2 tablespoons of tomato sauce
1 tablespoon of fruit cider vinegar
teaspoon Worcestershire sauce
salt and ground black pepper (to taste)
Canola oil (for frying)
2 cups white cheddar cheese curd
How and Steps to Make:
Step 1.
Cut the potatoes into long pieces. Place the chopped potatoes in a large bowl. Fill a bowl with enough cold water to cover the potatoes and refrigerate for 2 hours.
Step 2.
Heat the butter in a large, deep skillet over medium heat. Once the butter has melted, whisk in the flour and cook, stirring frequently, until creamy (about 2 minutes).

Add the chopped onion and garlic and cook until soft (about 2 minutes more).

Add beef stock little by little while whisking. Add the tomato sauce, vinegar, and Worcestershire sauce.
Step 4.
Season with salt and pepper. Bring to a boil while whisking. Cook, stirring, until the mixture thickens (about 5 minutes). Keep the sauce warm.
Step 5.
Heat the oil in a frying pan to 325 degrees. Drain the water from the potatoes and dry with a paper towel.
Step 6.
Fry the potatoes again in small batches, stirring occasionally, until crisp and golden brown.
Step 7.
Drain on paper towels. Divide the potatoes into serving plates. Pour the sauce over the fries on a serving plate and sprinkle with the cheese curd.
Step 8.
