French Onion Soup |
Garçon! I think there is, how do you say fly in my soup! (The waiter looks horrified then starts staring at the soup.) “Oh no, sir! Not a fly! Look at those lines! It's a bee!” But don't worry guys! No bees in our soup today for us! Not! Just enough onions! Millions of onions! Onions for me! Millions of onions! Free Onions! Or as the French say Onion! But don't get distracted just yet.
One legend about the origin of French onion soup is that one night King Louis XV of France returned to his hunting lodge, only to find onions, butter and champagne in the kitchen. Cleverly, he mixed it up and created the first French Onion Soup. Another story, links the origins of French onion soup to the farmers of Les Hall, Paris' old market, where farmers would sip large mugs of onion soup to warm themselves while preparing for morning activities in the frigid weather. I think I prefer stories with champagne! Sounds like having a more imaginative bubble.
French Onion Soup is a rich, thick soup with a sweet onion taste! It tastes great served with thick toast spread with butter or melted cheese. And even better, onions, with their many layers, are good for you!
Onions contain antioxidants, with the best known being quercetin, which helps eliminate free radicals in the body, protects and regenerates vitamin E, inhibits the oxidation of 'bad cholesterol' (low density lipoprotein) and also contains small amounts of potassium, folate and vitamin C.
Researchers have also found that people who eat onions daily can increase their "good" cholesterol (HDL), said Dr. Barry Sears in his book The Top 100 Zone Foods. Interestingly, quercetin can also be found in tea and apples, but its absorption is more than three times that of onions compared to apples! So throw away that apple and eat onions every day to keep the Doctor away!
French Onion Soup
Ingredients:
8 large chopped onions,
30g butter,
1 tbsp olive oil,
2 tbsp fresh thyme,
2 tbsp wheat flour,
2 tbsp cornstarch,
2 tbsp brandy,
2 tbsp Dijon mustard,
4 cups beef stock,
2 glass of water
How and Steps to make French Onion Soup:
Steps 1.
Place sliced onion, butter, oil and thyme in a large saucepan over medium-high heat.
Steps 2.
Cover and cook for about 35 minutes, stirring occasionally until soft and golden brown.
Steps 3.
Add flour and cook and stir for 3 minutes. Then add the brandy and mix well.
Steps 4.
Add mustard, beef stock and water, stir, then simmer for 15 minutes. Serve hot with fat butter toast!
Note:
Tips! To bring out the best onion flavor, make sure you brown the onions well until they are golden and have a nice soft texture.
When selecting onions:
look for onions that are heavy for their size, firm throughout, free of soft spots and covered with a thin, dry skin. If he has all these qualities then you know he's a keeper.
