Simple Fast Food Fried Rice Recipe

Simple fried rice. Do you have a lot of leftover rice from yesterday because all the guests you depended on didn't come enough? Not sure what exactly to do with it? Then why not just make fried rice! Fried rice is a classic dish for recreating those leftovers! It's a super comfort food on those cold, chilly days, not to mention it's packed with flavor and easy to make!

This recipe for the vegetarian version is simple, but you can really add almost anything and anything to fried rice. If you only have light soy sauce at home, don't worry, black soy sauce is not that important, but it gives the fried rice a better color. You can also add chili flakes if you like your fried rice a little spicier!

Fried rice
Ingredients:
2 cups cooked rice
4 tablespoons vegetable oil
2 eggs
2 small carrots diced
cup peas
2 tablespoons finely chopped scallions
2 tablespoons soy sauce
1 tablespoon soy sauce
3 tablespoons sesame oil
salt and pepper

Steps to make simple fried rice:
Steps 1.
Heat 2 tablespoons vegetable oil in a skillet or pan on medium-high heat.

Beat the eggs with salt and pepper, then add them to the skillet or pan.
Steps 3.
Once the egg mixture looks half cooked, flip it over. (It should be a nice gold color on both sides).

Remove the omelette from the pan, cut into thin strips and set aside.

Heat 2 tbsp vegetable oil in a wok/pan on medium-high heat.

Once the skillet is hot (glossy surface), add the rice, and sauté for a minute. Add chopped carrots, dark soy sauce, and light soy sauce. Mix.

Add peas and sesame oil, mix well. Keep stirring for 5-10 minutes or until the rice looks jump.
Steps 8.
Add the omelette slices, scallions, and salt and pepper, and mix well. Serve hot.

Instructions:
Tips! It's hard to describe exactly how the rice jumps, but when it does, you'll know! The whole point of waiting to see your rice jump is to let you know it's ready. If there's no skipping, it means your rice is still a bit mushy, so the taste isn't perfect!
