Blueberry muffins |
Simple old blueberry muffins! One of the safest muffins to make, practically foolproof, and filled with delicious blueberry goodness. It takes about 5 minutes to whisk all the ingredients and then half an hour of baking before you are greeted with the pleasant aroma of freshly baked muffins! If you like your muffins full of fruit then I would probably recommend adding another half cup of blueberries to your mix, just to be safe.
On a completely random note, I've found that eating frozen blueberries is absolutely delicious during hot summer evenings. Every blueberry is like ice sweetness, without all the artificial sweeteners in the ice cubes, and it's healthy for you too!
Blueberry muffins
Ingredients:
3 cups self-raising flour
1 cup brown sugar
125 grams melted butter
2 lightly beaten eggs
1 cup milk
1 cup blueberries
Method:
Steps 1.
Preheat oven to medium, 180 degrees Celsius.
Steps 2.
Line a large 2 x 6 hole muffin tin with a muffin tin or wrap or grease with melted butter.
Steps 3.
Sift flour into a large bowl. Add the sugar, then make a hole in the middle.
Steps 4.
Add the melted butter, egg and milk mixture until smooth, then stir until smooth. (Don't over-mix, the dough will look a little lumpy)
Steps 5.
Fold in the blueberries, then pour the batter into the prepared muffin tin.
Steps 6.
Bake for 25-35 minutes or until golden brown. Serve warm or cold!
